A critical requirement in the LN₂ ice cream process is proper oxygen monitoring in enclosed spaces. Because nitrogen can displace oxygen, users must install oxygen sensors and ensure adequate, professional-grade ventilation. Safety guidelines consistently emphasize that both monitoring and ventilation are mandatory for safe operation.
One reason whipped cream may appear more common in some nitrogen shops is that it visually and texturally offsets the dense, cold mouthfeel caused by low overrun. It can make the dessert feel lighter and creamier without actually fixing the internal ice cream structure.
